Truffle Brownie Bites


These brownie bites are really really moist and creamy and have the texture like chocolate truffles (hence the name for the title) Its best to use 72% cocoa dark chocolate (at least) in this recipe as it adds a much nicer chocolatey flavor and has a slight bitterness to cut back the sweetness. 

Truffle Brownie Bites

240 g bittersweet chocolate (at least 70% cocoa solids)
100g unsalted butter
3 eggs
135g sugar
55g all-purpose flour

Preheat the oven to 300F. Put the chocolate and butter in a heatproof bowl over a saucepan of barely simmering water. Do not let the base of the bowl touch the water. Stir until melted. Set aside to cool. Put the eggs and sugar in a mixing bowl and whisk until pale and creamy. Sift in the flour and fold in gently. Finally, fold in the molten chocolate and mix until smooth. Pour the batter into the prepared baking pan and bake in the preheated oven for 15 minutes or until it doesn't jiggle in the center. The brownies should have risen slightly. Let cool completely, then cut into roughly 16 squares. I drizzled some melted chocolate over my squares of brownie and topped with some freeze-dried raspberries and wild dried rose petals (optional).
