Banoffee Slice



This slice is pretty much just like a chocolate caramel slice except its got banana in the caramel, so I called it banoffee slice as it is very similar to the well-known banoffee pie. If you don't really like the taste of caramelized banana, i wouldn't suggest making this slice as the banana flavor is reassembly strong, but it is still very yummy and indulgent like the usual choc-caramel slice. 

Banoffee Slice

Banana Toffee Layer
3 small bananas
150 ml full cream milk
6 heaped tbsp castor sugar
1/3 cup condensed milk
3 tbsp butter

Shortcake Base
180g butter
225g flour
60g icing sugar

Chocolate Layer
5 ounces dark chocolate
1/3 cup icing sugar
1/3 cup cream
1 egg yolk
1 1/2 tbsp butter

Heat oven to 170 degrees C fan bake and grease a 17 x 27cm slice tin. Mix all the ingredients together until a dough forms.
Press this shortcake mixture into the base of the prepared slice tin and bake for 15 minutes or until golden brown around the edges (make sure its not too brown else it gets to crumbly). Remove to cool.

Heat the sugar in a pan over a medium heat to caramelize  Meanwhile, place the bananas and milk in a blender and blend, like a smoothie, until smooth and there are no lumps. Once the sugar has caramelized and turned a dark amber colour, slowly pour in the banana mixture and whisk over the heat until the mixture is smooth. Add the condensed milk and butter and whisk to melt the butter. Heat the mixture, stirring constantly until it comes to a boil, them remove from the heat. Pour over the cooked base and place back in the oven for a further 15 minutes or until the center doesn't wobble and it is set. Leave to cool in the tin. 

Put chocolate and icing sugar in a medium heat-proof bowl.
Simmer heavy cream in a heavy saucepan over low to medium heat.
Pour the cream over the chocolate and allow to rest for about 30 seconds. Whisk until chocolate is completely melted and mixture is smooth. If the chocolate does not melt completely, place bowl over a pot of simmering water and continue whisking.
Whisk egg yolks in a separate heat proof bowl. Whisk about 1/4 cup of the chocolate mixture into the egg yolks, then pour the egg yolk mixture back into the chocolate mixture and continue whisking.
Add butter and whisk until mixture is completely combined and smooth. Pour over the cooled slice and spread out in an even layer. Place in the fridge to set before cutting into slices.
