Rhubarb, Cherry and Coconut Financiers

I got the recipe for these here except I used a small chunk of poached rhubarb and a freeze-dried cherry instead of placing a half strawberry on top. You could also use ground coconut (desiccated coconut pulsed a few time in a food processor) instead of ground almonds, which is what I did. I then dusted them with icing sugar and piped over some melted dark chocolate.
