Quick and Easy Peanut Butter and Chocolate Tarts


I made these for my friends as we are all quite obsessed with peanut butter and chocolate!! Underneath all the chantilly cream and peanut butter filling there is a layer of dark chocolate truffle, which you can't really see in the photos.

Peanut Butter and Chocolate Tarts 

8 blind baked pastry shells (I made my own but you can buy nice ones from farro and what not)
1/3 + 3/4 cup cream, whipped
1 tsp vanilla bean paste 
1/2 cup smooth peanut butter
3 ounces cream cheese
1/4 cup condensed milk 

Chocolate Layer
3 ounces dark chocolate
1/4 cup cream
1/2 tsp vanilla extract
1/2 tbsp butter

Beat together the peanut butter, cream cheese and condensed milk until smooth and fluffy. Fold in 1/3 cup of the whipped cream. Set aside. Mix the vanilla bean paste into the remaining whipped cream (be careful not to over mix) and put into a piping bag fitted with a 2 cm round nozzle. set aside. 

In a small saucepan, gently melt together the chocolate layer ingredients together until smooth. Remove from the heat and divide equally between the tart shells and spread in a layer on the bottom. Spoon over a large dollop of the peanut butter mixture and pipe over the cream. Finish off with some toasted peanuts or a drizzle of slightly melted peanut butter.
