Vegan Date and Almond Truffles


2 tbsp Chia Seeds
juice and rind of 1 orange
3/4 cup almond meal
1/2 tsp cinnamon
1/2 cup Shredded Coconut
1 cup Dessicated Coconut (for rolling in)
2 tbsp Coconut oil (melted till liquid)
1/4 cup Almonds 
1/4 cup walnuts
3 tbsp honey
1/4 cup saltanas
3/4 cup medjool dates, chopped
1/2 tsp vanila bean paste

pinch sea salt

Mix together the chia seeds and orange juice and rind and set aside for 5 minutes. Place into a food processor along with everything else and pulse until everything comes together and the almond and dates are finely chopped up amounts the dough. Roll into balls and roll in the desiccated coconut. Store in the fridge.
