Raspberry Melting Moments


I used a basic shortbread recipe for the biscuit part, adding a little pink food coloring to the dough before forming them into balls and flattening them with 3 fingers (I did not pipe them as the recipe does). I filled my melting moments with a fluffy raspberry icing. For the filling, I used this recipe but halved the quantity and added about 1 1/2 tablespoons of freeze dried raspberry powder.
