For this pie, I used a recipe from my Great British Bake Off Cookbook. This Recipe is originally made with just rhubarb in the filling, but I took out about 1/3 of the rhubarb and replaced it with strawberries. I also added the juice of 1 lemon to the filling as I like having that bit of tartness with a meringue pie, so its not all too sweet. I found that its not necessary to spread a layer of the meringue on top before piping the peaks, as it says to do in the recipe, as you run out quickly and end up having a gap with no peaks in the middle of the pie.
