Almond and Vanilla Pancakes with Thyme and Honey Fried Banana  

1 ripe bananas
1 small egg
2 tbsp ground almonds
1/2 tsp vanilla bean paste
1/8 tsp baking powder

1 banana, cut into 1.5 cm chunks
1 tbsp wild thyme honey
1 sprig of thyme
1 tbsp coconut oil, melted

to serve 
yogurt 
coconut nectar

Mash the banana and add the egg. Stir until smooth. Add the ground almonds, vanilla and baking powder and stir to combine. Heat some oil in a fry pan and fry 2 tbsp of the batter at a time until dark golden on both sides. 

For the fried banana, mix together the honey and coconut oil. Pour evenly in a fry pan over a medium heat and add the small sprig of thyme. Place the banana slices in the pan and fry for about 2 minutes of each side. Serve on top of the pancakes with some yogurt, coconut nectar and nuts of your choice.
