Rhubarb, Raspberry and Tamarillo Pie with a Coconut Crumble Topping



I was looking over my blog posts and realized that I had not yet posted a pie!! so this one is sort of a mix between a crumble and a pie as it has a crispy and coconuty oat topping. The base fruit is rhubarb but you can experiment with any fruit of your choice that are in season. The original recipe calls for strawberries as well as rhubarb, so I used half raspberries and half chopped tamarillos instead of strawberries. I also found that it was not necessary to use all of the crumble topping that the recipe makes so I had about 1/2 cup left over.
