Vietnamese Green Papaya, Mango and Crispy Shallot Slaw
3 tbsp sushi vinegar
1 tsp sesame oil
2 tsp tamari soy sauce
dash of fish sauce
1 1/2 to 2 tsp honey or brown sugar
juice of half a lime
Mix all the ingredients together until combined. Set aside. (make sure you taste it and add a little more lime or honey to suit your liking, as everyone likes their dressing a bit different)
Half green papaya, julienned
1/2 large chilli, thinly sliced
1/4 small red cabbage, thinly sliced
1/4 cucumber, deseeded and thinly sliced
2 mango cheeks, thinly sliced
1/2 small red onion, sliced
1 spring onion, sliced
handful crispy shallots
handful toasted peanuts, roughly chopped
sesame seeds
vietnamese mint
Sriracha chilli sauce
Place the green papaya and chilli in a bowl and pour over the dressing. Let sit for about 10 minutes. Meanwhile layer all the ingredients on a serving plate then toss over the green papaya and excess dressing left in the bowl. Serve.
