I made these mini cupcakes in the weekend for my friends as we are all quite obsessed with really moist and chocolatey cupcakes. The base is dark chocolate (recipe form here, half quantity needed), then filled with chocolate fudge sauce and topped with vanilla butter icing.
Chocolate fudge sauce
120g dark chocolate
120g cream
1 tbsp golden syrup
1 tsp vanilla extract
Icing
220g softened butter
3 cups icing sugar
4 tbsp milk
1 tsp vanilla extract
2 food colourings of your choice
Place all the chocolate fudge sauce ingredients in a saucepan and heat gently, whisking, until everything is melted and smooth, cool slightly before placing in a piping bag fitted with a filling nozzle and set aside.
To make the icing, beat the butter until smooth and slightly paler in colour. Beat in the icing sugar, 1 cup at a time until all combined. Add the milk and beat until smooth and fluffy. Diving the mixture in half and colour 1 half with one colour and the other half with a different colour. Fit a piping bag with a star tip nozzle. Place one of the icing colours on one side of a piping bag and the other colour on the other side. set aside.
Pipe the fudge sauce into the center of each cupcake and pipe the icing on top.
