Best soft and chewy chocolate chunk
cookies
125g butter,
melted
85g castor sugar
85g soft brown
sugar
1 egg
1 tsp. vanilla
extract
150g plain flour,
sifted
Pinch of sea salt
100g 70% cocoa
dark chocolate, chopped into chunks
Pre-Heat the oven
to 190 c and line 2 baking trays with baking paper. Set aside.
Mix together the
melted butter and both sugars until combined. Add the egg and vanilla and beat
until smooth. Fold in the sifted flour and sea salt until no streaks are visible.
Fold in the chocolate chunks. Place heaped tablespoons of the mixture onto the
trays, making sure you leave a few inches in-between the cookie dough as they
spread a fair amount in the oven. You should have about 10 cookies on each
tray. Place in the oven for 8-10 minutes or until the cookies are set and they
are slightly golden around the edges. Leave to cool on the trays for 5 minutes
before transferring to a cooling rack.
