I got the recipe for this cake here. It is a vegan recipe and there seems to be virtually identical recipes for this "cheesecake" everywhere!! The base is made from fresh medjool dates and almonds and the filling is made my soaking raw cashews over night then blending them with other ingredients until you have this amazinnggg smooth and creamy filling! you can change around the flavours to suite you and I found this recipe works best using a 15cm cake tin and make sure you line it with gladwrap! I decorated mine with freeze-dried raspberries, flowers, pistachios and sugar pearls, which I was kindly given free samples of from Carroll Industries (only maker of sugar sprinkles in nz)
